For Super Bowl Sunday I wanted to make something a little over the top and after reading CTK1’s post about Twitter and food posts, I thought I’d share with you how I made The Bacon Bomb. Read on…
I used 1lb of ground pork, 1lb pulled pork, 1 lb of bacon, 1/2 onion, 1/2 bell pepper, garlic, balsamic vinegar, Frank’s Red Hot, Dinosaur BBQ sauce, black pepper, cinnamon
Make sure all the veggies are chopped of fine, then combine into a bowl. Heat the onions and peppers in a small skillet with a touch of oil. After 5 minutes, add a generous helping of balsamic vinegar and cook until slightly caramelized.
Form the 1lb of Ground Pork and Pulled Port into a square brick about 1 in. thick. coat with your favorite meat rub. Then dump all your veggies on top and coat with a generous amount of BBQ sauce.
Now Roll the pork into the bomb!
Probably the hardest part of the recipe is weaving the bacon. Size it up on a cutting board and use a basket weave on the bacon. This is what holds the bomb together.
Once the bomb is wrapped, preheat the oven to 350 degrees, and glaze with more BBQ Sauce
Cook for between 2.5 and 3 hrs turning up the heat towards the end to about 375 degrees to char the bacon. Approximately every 30 to 45 minutes reglaze with BBQ sauce, drain the pan of grease and rotate the bomb a quarter turn. Repeat and Enjoy!
Honestly when I first saw this I got a fierce pain up and down my left arm and nearly keeled over in cardiac arrest. This is a ridiculous meal and should be called: Suicide Pork… and wow, yummy!

Thanks for the comments Cathy and Cindy. It turned out to be pretty damn good, but really heavy. I was excited about eating a good chunk of it but could only get a few pieces in. I would certainly make it again though.
I’ll try to post more food articles as sometimes we get into some pretty good recipes and are worth sharing.
